The ultimate "green" water, in fact De L'aubier may be the greenest water on earth. This water comes from a new source of harvesting water. Yes, it is harvested. De L'aubier is made from the sap of the maple tree, and literally harvested like a fine wine during maple syrup season. Each spring, Quebec maple syrup production generates about one billion liters of sap water. During the process, the sugars are separated from the sap, leaving a full-bodied, silky characteristic. Until now, this water had been discarded, but is now bottled and dated by harvest date. Because the sap only runs for a short time in early spring, the number of bottles that come to market is limited. Further, adding to the “green” nature of this water, the harvest is done with an equitable partnership with Quebec Organic Maple Farms.
It bears the name of its origin, the sapwood, which is l'aubier in French. It's the living part of the tree that allows the sap to rise from the roots to the branches. It is a refined taste, and not a sugary or maple flavored water.

Don't Knock It Until You Try It
In our August 2013 edition of the Fountainhead, we mentioned Ray's and Stark Bar, and more importantly, Martin Riese, the General Manager, and the first water sommelier in the US. Martin received another write up last month in priceonomics an online data source and blog. It's an article with some jabs and some truths, but you can't deny, bottled water is a big industry. Martin was also on Conan O'Brien and the video is shown in the article. You may notice, Berg, Iskilde and Vichy Catalan on the Conan O'Brien show....all supplied by Aqua Maestro!

2014 State of the Industry: Bottled water
Consumers’ push for healthy beverage choices is matching up to sales numbers seen throughout the bottled water category, according to a report from Chicago-based Mintel. It notes that although the category declined 6.6 percent in 2009, it saw slight recovery in 2010 and has continued on this upward trend. One segment that has helped fuel the growth of the category is the sparkling and mineral water segment, which has posted double-digit growth.
Brands are pushing the healthy alternative and zero calorie option, giving bottled water an edge over other flavored drinks. One way brand owners are communicating this is through the Drink Up campaign, a platform created by the Partnership for a Healthier America (PHA). This brings together public- and private-sector partners to encourage people of all ages to drink more water. Brands such as PepsiCo’s Aquafina, The Coca-Cola Co.’s Dasani, Hint Inc.’s Hint, Wat-aah!’s Wat-aah!, Beverly Hills Drink Co.’s Beverly Hills 9OH2O, Danone’s Evian Natural Spring Water, and Voss of Norway ASA’s Voss.

It was 1:30 in the afternoon, and we received a phone call from Juneau, Alaska. The woman was saying she needed 36 cases of evian 330ml bottles sent overnight, air freight, via Alaska Air. It was necessary to be delivered to the yacht (pictured here) before it left port the next day. The water was delivered to the airline 2 hours later. Obviously, price was not a consideration. It seems Kirsty Bertarelli, currently the richest woman in the UK, had to have her evian, but for a 314 foot, $170 million dollar yacht which costs over $400,000, just to fill the fuel tanks, what's a few extra dollars to get their favorite water? (By the way, she was also a former Miss UK).

Dogs Downunder Drink Bottled Water
A recent article in the Melbourne Herald Sun reveals a list of demands placed on Nannies. Many conjure up images you might expect, strip the beds every Monday, whether they have been used or not, drive across town to shop or deliver the kids to or from school. But this one, we had to include here. It seems one nanny was yelled at for filling the dog's bowl with tap water instead of bottled water. Certainly, she should have known better.
A single tree will give off about 70 gallons of water per day in evaporation.
Each day the sun evaporates a trillion tons of water.
People in Boulder, Colorado do not have to wait as long for a pot of water to boil as those in lower areas. Water at one atmosphere of pressure, or sea level, boils at one hundred degrees Celsius (212 degrees Fahrenheit). As you gain altitude the temperature at which water boils decreases.
Old Faithful, a geyser in Yellowstone National Park, can spout water 170 feet in the air, as high as a 17-story building.
If able to be mined, all the gold suspended in the world's seawater would give each person on Earth 9 pounds. At today's value, $1307/ounce, that would be the equivalent of $188208.00/per person.
